Edenilson and Ciomara de Carvalho are a husband-and-wife team who focus solely on producing specialty grade coffee on their 3.2 Ha farm high up in Minas Gerais’ volcanic Santana de Caldas region.
Edenilson grew up helping his father in the coffee fields developing the skills that he would need to fulfil his ambition of one day farming coffee himself. At just 19 he purchased a plot of land in the Santana de Caldas region, where volcanic hot springs have created nutrient-rich soils. Edenilson and Ciomara only farm coffee, cultivating 2.5 of their 3.2 Ha of land and producing around 110 bags of coffee per year. Because of the farm’s altitude and cooler temperatures their harvest tends to start later in the season.
Edenilson focuses on growing, whilst Ciomara looks after post-harvest processing. They have had their best results with extended fermentation, partially drying their crop on a patio under a sun shade then bagging and storing in their warehouse for a month before a final drying stage, resulting in optimal moisture content and award-winning coffees.
The carbon footprint from this coffee's journey has been offset twice.
