    Finca El Carbonero is a dedicated coffee estate situated in the renowned specialty-growing region of Bruselas, Huila, Colombia. Driven by a commitment to quality and technical precision, the estate blends traditional Colombian farming heritage with modern post-harvest methodologies. By refining each phase of production, from selective harvesting to state-of-theart climate-controlled drying, Finca El Carbonero consistently delivers clean, complex, and expressive coffees tailored for the international specialty market. Perched at altitudes ranging from 1,600 to 1,750 meters above sea level, the estate benefits from nutrient-rich soils, ample rainfall, and significant day-tonight temperature variations characteristic of the Huila highlands. This microclimate allows the coffee cherries to develop slowly, resulting in high bean density, vibrant acidity, and concentrated natural sweetness. The team at El Carbonero reinforces these environmental strengths with meticulous hand-sorting, ensuring only fully ripe, defect-free cherries enter the processing stream. Processing at Finca El Carbonero is governed by strict parameters designed to enhance cup clarity and terroir expression. After a thermal flotation and disinfection phase in water at 65°C, whole cherries undergo a controlled 36- hour aerobic oxidation in dedicated tanks prior to pulping. The pulped coffee is then sealed into an anaerobic environment for 48 hours to foster complex flavor development. For drying, the estate utilizes advanced stainless-steel dehumidifier systems operating in a dark, hermetically sealed room with temperatures capped at 37°C. This cutting-edge method prevents external contamination, prevents the loss of volatile terpenes and delicate aromatics, and guarantees uniform drying curves until reaching an ideal 10–11% moisture level. This lot brings together Caturra and Tabi, two iconic varieties that complement each other harmoniously in the cup. Caturra is prized for its bright acidity, citric brightness, and crisp balance, while Tabi—a cultivar developed by Cenicafé by crossing Bourbon, Typica, and Timor Hybrid— contributes rich body, sweet stone fruit notes, and enhanced disease resilience. Together, cultivated at high elevation and treated with precise controlled washed processing, they yield a beautifully structured, clean, and multifaceted profile.
