El Farallón is a small village overlooking the city of Ciudad Bolívar. With high
altitudes and a tropical climate, it’s perfect for growing coffee. This is where José
Arboleda and Elvia Ramirez purchased their farm in 1974 - Finca Los Alpes.
Today they have a finely tuned system for creating special coffees.
After being picked, the cherries are sorted in flotation tanks to ensure only ripe cherries are left. The fermentation process is split in two phases and leverages exclusively the yeasts that are naturally present.
After a 16 hour ferment, the cherries are transferred to hermetic containers where carbon dioxide is regularly injected to displace oxygen, for 72 hours. This provides an ideal environment for the development of lactic acid bacteria.
The cherries are then dried before entering a two-month stabilization phase.
The carbon footprint from this coffee's journey has been offset twice.
