    Bookkisa is the name of the kebele (village) from which the coffee cherries
    come. Organised and produced by Sookoo Coffee, founded by brothers Ture and
    Assefa Waji. This lot is made up of two varieties; Gibirinna 74110 and Serto 74112. Both of these are landrace varietals selected for their disease resistance, from the forest by the Jimma Agricultural Research Center
    in 1974.
    The cherries are dried on raised beds at an elevation of 2100 masl for around 20
    days. They are moved and rotated frequently to ensure even and precise
    drying. Unlike many naturals, the present with high florality and acid with very little booziness. They are often described as "Ethiopia first, natural
    processing second."

     

     

    The carbon footprint from this coffee's journey has been offset twice.
    This includes boiling your kettle to brew it.
